It has been too cold for me to venture outdoors for the past few days so we have done a bit of housework to keep the home in good order and Pat had a short time available to start on her picture.
I thought this was a good time to share one of my very simple recipes with you, ideal for a light lunch or a starter for a main meal.
Prawn and Rice for two
Ingredients:
Half a cup of White Long Grain Rice.
22 medium sized ready cooked Prawns
12 Baby Tomatoes
Marie Rose sauce
Lettuce (optional)
Cucumber (optional)
Preparation:
Three quarter fill a medium sized saucepan with water and bring to the boil.
Add the Rice and leave to simmer for 15 minutes until the majority of the water has evaporated
While the Rice cooks place 11 Prawns on the centre of each plate.
Coat the Prawns liberally with the Marie Rose sauce.
When the Rice is ready tip it into a sieve to drain any surplus water and then spoon it in a circle around the Prawns
Halve the tomatoes and place them on the rice in a clocklike fashion.
Your meal is ready but if you want something a little more substantial then shred the lettuce and slices of cucumber (halved) and use it as a base for the main recipe.
N.B. For 4 people double the ingredients
For 6 people treble the ingredients
Just trying to help those who are mathematically impaired. No extra charge.
Like all meals, including Bacon and Eggs, this recipe can be eaten with a nice wine. My suggestion would be to drink whatever wine you like best. This business of White wine with fish and Red with meat is rubbish. What are you supposed to drink with Rose wine, fishy meat?
This meal is enjoyed even more if someone else washes up.
